Spinach Garlic Hummus

I’ve been making lots of hummus for snacking lately…this time around I had a bag of spinach in the frig so I threw it into the mix. 🙂 Very garlicky, very yummie!

Here’s what I did:

2 cans (15 oz) garbanzo beans, drained
pretty much the whole bag of spinach (probably 3 cups)
1/3 cup olive oil
4 TBSP lemon juice
5 TBSP tahini
1 to 2 tsp red pepper flakes
4 plump cloves of garlic
1/2 tsp salt
1 to 2 tsp paprika
1/2 tsp ground cumin
1 tsp ground coriander

Smash it altogether in your food processor.

Enjoy with pita chips!
