Mediterranean Salad with Grilled Greek Chicken

Today was my time to feed a group of 12 women at work (a monthly luncheon)…I’m pretty new to the group so was nervous as to what to make. Will they like it? Did I make enough? Wonder how long it would take Jimmy John’s to get a bunch of sandwiches up to our conference room? ACK!

I decided on a Greek theme, and picked out recipes that I can serve cold or at room temperature! I found recipes from Giada De Laurentiis, Rachael Ray, Ina Garten, and Jamie Oliver. Used a marinade of Rachael’s for the grilled chicken. Giada’s Mediterranean salad, and a meld of Ina’s and Jamie’s Greek Salad. Throw in some pita bread and a lemon cake, from another group member, and we had an AWESOME lunch!

Start with the marinade:

1 large tub of Greek Yogurt
2 tsp ground Cumin
2 tsp ground Coriander
2 tsp dried Greek Oregano and Basil (I used my dried herbs from my garden)
1 package of frozen chicken breast tenders

Mix all together and put in large ziplock bag, stick in frig overnight. Either grill on the bbq, or put under the broiler, like I had to as it was raining out last night.

Next, Giada’s Mediterranean Salad:

3 Tbsp Olive Oil (plus about 1/4 cup)
3 cloves garlic, minced
1 pound Israeli couscous
3 C chicken broth
2 lemons, juiced
1 lemon, zested
1/2 tsp salt
1/2 tsp pepper
1 C chopped FRESH basil
1/2 C chopped FRESH mint
1/4 C craisins (dried cranberries)
1/4 C toasted pine nuts (she says to use silvered almonds, toasted)

In a medium saucepan, warm 3 TBSP olive oil over medium heat. Add the garlic and cook for 1 minute. Add the couscous and cook until toasted and lightly browned, stirring often, about 5 minutes. Add broth, and the juice of 1 lemon, bring to a boil. Reduce heat to simmer, covered, until the couscous is tender, but still firm to the bite. About 8 minutes. Drain the couscous.

In a large bowl, toss the couscous with about 1/8 C of olive oil, remaining lemon juice, zest, salt and pepper, pine nuts and craisins and let cool. Once couscous it at room temperature, add the fresh herbs. Toss to combine and serve. (I made this up the night before and took it out of the frig about an hour before serving).

Now for a blend of Ina’s and Jamie’s Greek Salad:
8 cups of halved grape tomatoes ( I used yellow and red)
1 med-lrg red onion, thinly sliced
1 english (seedless) cucumber, cut thickly
handful (1/4-1/2 cup) fresh mint, chopped
handful (1/4-1/2 cup) fresh basil, chopped
1/4 cup fresh dill, chopped
1/2 cup fresh flat-leaf parsley, chopped
12 Greek Kalamata olives, crushed by hand
1 red bell pepper, sliced
1 green bell pepper, sliced
8-10 TBSP Olive oil
1/4 C Garlic Red Wine Vinegar
1 tsp kosher salt
2 tsp pepper
feta cheese, crumbled

Throw all ingredients together (except last five) in a large bowl. Put in frig until 1 hour before serving. Mixed olive oil, vinegar, salt and pepper together…pour over salad one hour before serving, toss well.   Sprinkle the top with dried oregano and basil.  Let everyone sprinkle feta over their salad…as much as they like!

FOR TODAY … 24 May 2011.

Outside My Window… People driving to work, Gold finches on a thistle sock I put on a tree outside my window, lots of clouds.

I am thinking… Lots of things. It’s one of those days when I have so much twirling around my brain that it almost hurts.

I am thankful for… Friends and family…they truly are an amazing gift from God.

From the kitchen…  Last night I made carnitas tacos (yes, I love carnitas tacos). Not sure about tonight. Probably some sort of baked chicken.

I am wearing… jeans, tennies, long-sleaved shirt, hair in pony-tail.

I am creating… Craft challenge for a group I haven’t visited in a while…just not in the mood to talk much over there. But it was my pattern that was voted on, so I’ll enter!

I am going… try not to worry.

I am reading… a John Saul book I picked up at a rummage sale for .25

I am hoping… for patience. I really need to breathe deep, exhale, breathe, exhale…pass out.

I am hearing… Finches outside on the feeder.

Around the house… boxes, lots of boxes down in the basement. Am hoping for a move within two months.

One of my favorite things… Lucy’s and my snuggle time 1/2 hour before getting up to shower.

Hobo Quilt is FINISHED!

My husband’s Hobo Quilt is FINISHED, washed, and on the bed!

I has a warm fuzzy flannel backing. I used a thin 100% cotton batting.

It was fun, it went pretty fast, am glad it’s over. LOL! Onto a quilt with bright fun fabrics now…me thinks feedsacks! I pulled these pretties from my stash las night.

And staying with a quilting theme…Lucy and Leo napping on my Orange & Lime quilt. It was cold yesterday…winds, snow, rain, more wind. Springtime in Nevada SUCKS!

For Today ~ 2 May 2011 ~ Simple Woman’s Daybook

FOR TODAY … 2 May 2011.

Outside My Window… A bit cool this morning, but the sun is shinning. All the construction guy’s cars are lined up over in the dirt lot outside my window. Shrubs and trees are starting to sprout out (newly planted last fall)…people going to work.

I am thinking… The weather has been very nice lately! Sunny and warming up! We reached 70F yesterday. Which btw, was at Earth Day events at Idlewild…and noticed a huge amount of young kids (teenagers to mid-20’s) that were smoking like chimneys. What the hell is up with that? EARTH DAY! OUTSIDE! CLEAN AIR! And I could hardly breathe.

I am thankful for… my job. I may complain about it, but I have it…as my husband was laid off last week. His company had a big slow-down and they were not in need of a full-time shipping/receiving clerk.

From the kitchen… will be bbq’ing tonight. Not sure what yet. 🙂 Last night I made carnitas tacos.

I am wearing… Capris, sandals, t-shirt/blouse, hair down.

I am creating… Still working on the Hobo Quilt….I have the flannel backing sewn together, will sandwich the quilt tonight.

I am going… update my husband’s resume before I start work.

I am reading… Nothing.

I am hoping… that I don’t bruise too badly after yesterday’s fall off my bike. Nothing like falling off your bike in a standing position! I hit my left elbow and have a bruise coming in the spot where my keys were in my pocket. Big Sigh.

I am hearing… me typing. Cars on McCarran. Someone coming into the office…hard not to miss them as we have magnetic doors that are pretty loud.

Around the house… carpet needs cleaning. I wish I could say a garden will be around the house.

One of my favorite things… Sunshine. Painted toe nails (especially the Del Sol polish that changes colors). Bare feet.

A Few Plans For The Rest Of The Week… Work on Hobo, get Mother Day’s cards, find a present.
