Blueberry Lemon Jam

I love blueberries…I LOVE LEMONS…and I sooooo like blending the two into a jam. I walked to the farmers market on California & Booth, that is held every Saturday during the summer & fall, and bought three baskets of fresh blueberries and two lemons.

Crush (I use a potato smasher) five (5) cups of blueberries (A raspberry hid in my bunch! The rascal!) and put them and the zest and juice of two large lemons into a large stock pot. Stir in a package of powdered fruit pectin and bring to boil over high heat (keep stirring). Add 5-1/2 cups of sugar all at once and bring to a rolling boil, stir constantly this time around. Boil for 1 minute after bringing the syrup to a rolling boil. Remove from heat. Ladle into prepared hot jelly jars, leaving a 1/4″ head space, wipe rims with a damp paper towel to clean…then add lid and screw band on. Place jars in canner making sure you have 1″ over the top of your jars, bring to a boil and process for 10 minutes (plus any additional minutes per your altitude)…I have to boil for 20 minutes. Remove from heat…leave in canner for about 5 minutes…take out your jars to cool. Then wait for the delightful pinging of the lids! 🙂

This is great on good ole peanut butter sandwiches. On pancakes. Frenchtoast. Scones. You name it!

Blueberry Lemon Jam:

5 cups blueberries (smashed)
zest and juice of 2 lemons
1 package powdered fruit pectin
5-1/2 cups sugar

Makes 6-7 half pints

For Today ~ 5 July 2011 ~ A Simple Woman’s Daybook

FOR TODAY … 5 July 2011.

Outside My Window… I just filled up the thistle socks outside my work window, so I have house and American Gold Finches eating. Not a cloud in the sky, it’s going to be another killer hot day. Traffic up on McCarran Blvd. Bird body print on my window…looks like someone flew into into it

I am thinking… I really hate 90+ temps. First week in July and we’re flirting with 100F already! Why don’t they (Facilities) open up the vents on this stupid building at night to let the cooler air in? Geez…it was 81F in my office this morning at 6:30! Damn my arse hurts from our bike ride yesterday morning.

I am thankful for… Friends and family…and hopefully for a new place to live by the end of July. TAPPING BANK ON SHOULDER…HELLO? IT’S A BLOODY SHORT SALE! TAKE OUR OFFER AND RUN! Well…It’s Mary’s offer, but I’ll be renting the house when it’s bought.

From the kitchen… Left over bbq’d tri-tip from yesterday. Tonight for dinner I will slice it up with tortillas and pico de gallo.

I am wearing… cropped pants, green peasant’s blouse, sandals, my SHORT HAIR just with some (hair, not chocolate) mousse in it…it’s awfully curly now that the weight of 10″+ is whacked off of it. 🙂 It’s very happy and bouncy now.

I am creating… Still plodding along with PSIQUILT’S quilt along…not many of us was able to finish ours in her time allotment. I have 36 blocks finished and ready to sew together to make the top. She already posted winners so I’m out of luck on winning the gift certificate at Fat Quarter Shop.

I am going… at work…finish the new fiscal year payroll and budgets. Home…pack non-essential items.

I am reading… Nothing.

I am hoping… Just found out this morning that a co-worker is down in an Arizona hospital with (what her doctor says) advanced breast cancer. Praying that they can help her. If you’re reading this R, will be thinking about you everyday!

I am hearing… my little fan in my office.

Around the house… ants. And lots of them.

One of my favorite things… watching my tomatoes grow.

A Few Plans For The Rest Of The Week… try to stay cool.

Here is a picture thought I’d share with you…
