Basil Balsamic Vinaigrette for Tomatoes and More!

After my most recent move, my garden plants that I dug up and put into pots are not doing the best…except for my herbs, they are doing wonderful. So…I’ve been buying heirloom tomatoes at the Farmers Market.

I want to share the vinaigrette that I’ve been making to drizzle over the tomatoes (and bread).

Cast of characters are:
(note– measurements are approximate, as I change it up each time I make it)

1/2 Cup Olive Oil
6-8 TBSP Balsamic Vinegar
4-6 cloves of garlic…I lean towards the 6 🙂
1/3 Cup Fresh Basil
1 TBSP Fresh Oregano
2 grabs of Sea Salt or Kosher Salt (probably about 1 tsp or more)
Fresh ground Pepper (I use the 3 peppercorn blend…and some black/red pepper)…and lots of it! 🙂

I use my small chopper/blender….mince the garlic, add chopped up herbs, add salt and pepper, vinegar, then olive oil….blend like crazy.

Drizzle over sliced tomatoes or some very good bread!

It’s good over pork chops…rice…bread and cheese…the list goes on! ENJOY!

FOR TODAY … 03 August 2010

Outside My Window… It’s 8:00 pm…sun is setting…bit of smoke from a fire near town (north side of Peavine Mountain), roses that need watering (I’m the only one who waters plants in this rental unit), pink hollyhocks across the street.

I am thinking… Wish I could still be in San Francisco…I had a blast there. And at Cliff Lede Winery. Sure wish I could afford their Poetry…goodness, that was a beautiful wine. Oh yes…and at Mario Andretti’s Winery! I just love Mario…and Michael…and Marco…and cousin John….ahhh hell…I love any ANDRETTI! 🙂

I am thankful for… Good memories. A great Giants and Dodgers game!

From the kitchen… Good LORD I made a KICKARSE dinner tonight! 🙂 Basil Tomato marinated BBQ’d chicken breasts; Heirloom tomatoes drizzled with a vinaigrette I made with fresh garden basil, garlic & oregano, olive oil, balsamic vinegar, sea salt, fresh ground pepper; pugliese bread with Port-Salut cheese; Raleys Mediterranean spiced blend olives (kalamata and green olives with peppers and fresh herbs); Toasted Head Untamed Red wine…the whole bottle. 🙂

I am wearing… shorts, pink t-shirt, barefoot and my hair up in a ponytail.

I am creating… Nothing.

I am going… to post pictures of the SF trip tomorrow.

I am reading… A Year in Provence…off and on.

I am hoping… that I can save up some money to take a trip to the Cliff Lede Winery for a tour/dinner and to take the Wine Train lunch trip.

I am hearing… the Giants – Rockies game on tv…GO GIANTS!

Around the house… clean… 🙂 I did the laundry, made dinner, did the dishes and am relaxing here posting and listening to the game.

One of my favorite things… Foggy mornings by the ocean with blue sunny sky in the afternoon. 🙂 Big sigh.
